Ingredients

Serves : 3
  • 1 cups basmati rice


  • 4-6 tbsp ghee


  • 1 nos onion thinly sliced


  • 10 nos cashewnuts


  • 2 tbsp raisins


  • 3 nos cardamom


  • 1 nos cinnamon stick


  • 3 nos cloves


  • 1 nos bay leaf


  • 2 sprig curry leaves


  • 1 tbsp salt or as per taste


  • 2 cups water or as required

Directions

  • Wash and soak the rice for 15-20 mins and set aside.
  • Heat 4 tbsp of ghee in a heavy bottom pan, add Cashew nuts and fry till golden brown. Then fry raisins until it puffs up. Keep both aside.
  • Now add onion to the same ghee and fry till caramelized. It will take around 5-10 mins. Take out and keep it aside.
  • Add cardamom, cloves, cinnamon, curry leaves and bay leaf to the same pan and allow it to splutter.
  • Add the drained rice and salt to it and fry for 2-3 mins. Add 1.5 cup of hot water to it and allow it to boil.
  • When rice is done add the remaining ghee, caramalised onion, fried cashewnuts and raisins reserving some for garnish.
